Swedish Creme with Berries

Stop right there. I have to warn you that if you’re still in bathing suit mode, and are still hanging on to some hope that you’re going to make all the other girls jealous when you walk out to the pool with your perfect body, you need to turn away from the computer now. This is especially true if you’re like me and can justify that anything with fresh fruit in it is “healthy” and “non-fat.” If this is you, please leave this website immediately.

It doesn’t make things any better that this recipe is stupidly easy to make – oh, and if you add blueberries and strawberries it is the PERFECT dish for 4th of July – simple, delicious and color-coordinated.

Uggh, I know. I sucked you in, didn’t I? You’re gonna be eating this on July 4th with a big, flowy cover up over that not-perfect bathing suit body, aren’t you?

It’s okay. You’ll still be happy. I promise.

Swedish Creme with Berries

Recipe adapted from my Aunt, Sara Rainey

2 cups heavy cream
1 cup sugar
1 1/2 teaspoon cornstarch
2 cups sour cream
1 teaspoon vanilla
Mixed berries

In a double boiler (or a glass bowl placed over a pot of water – either way), combine the cream, sugar and cornstarch and heat, stirring often, until the sugar has completely dissolved. The sugar should dissolve before it comes up to a boil.

Remove the mixture from heat and allow to cool. Beat in the sour cream and vanilla and chill. Serve over fruit.

  2. I loooove fruit and cream–it always reminds me of Wimbledon (since they’re famous for their strawberries and cream). And I’ve given up on that perfect swimsuit bod a looooong time ago. :)

    How much cream is eaten with the berries? In your photos, it looks like the berries drowning in the cream–like a soup. Or do you spoon a little over your berries like a sauce?

      My family isn’t exactly into the, ahem, low-fat thing, so we tend to drown our fruit in the creme. But it’s really a personal preference – if you prefer to just drizzle them that works fine too!

  5. Oh , sooo divine! Cannot wait to make this! I’ve never minded walking into a pool backwards! I’m not kidding, I usually use my daughter as the decoy! Go ahead, is what I always tell her, modeling nice manners of course. Little does she know , she is a lovely distraction, even if she is only 8! Her smile and gentle warmth is always the distraction!
